I have a pit boss silver series smoker removed the factory PID and wired the 1600 watt burner with #12 wire with a male plug. I smoke mostly sausage max temp 200* and briskets at 250* max.

I purchased a WS-1510ELPM quite frankly the manual is more than a little cryptic can someone suggest setting for the 1600 watt burner

You can just try the default parameter settings and see how it works. If it works fine, you don't need to change those parameters. If it is not good enough, please run auto-tune at 200F. Change parameter AT to 1 to start the auto-tune. For details, please check page 10 of its manual.
