OVP engaging sporadically when in steam mode on Rancilio Sylvia V6 RSPb

I've just set up my RSPb kit for the Rancilio Silvia V6 (w/ Pre-infusion) and haven't changed the factory temperature settins (105ºC brew temp, 140-139ºC steam temp). I've noticed that when setting to steam mode I hear "bubbling" noises that I hadn't heard prior to installing the kit which seem to be the OVP valve kicking in. Is this normal?

Also when in brew mode (105ºC) if I open the steam wand valve a little bit of steam will continuously flow out, something that would never happen before the PID kit install. I'm worried that maybe the RTD thermistor is under-reporting the boiler temperature. Or maybe my machine was just operating at a really low temperature before and I'm not used to it operating correctly...

Any advice or suggestions would be greatly appreciated. I think I may hook up a separate TC to my boiler to confirm if the reported temp is accurate.
