First of all, you need to choose the best heating element based on the size of your smoker. If you like to use 220V, 5000W element (the link you mentioned), you can check either

They are good for up to 240V/7000W element. If your element is within its limit, it should be no problem.

I'm going to purchase Hightemp wire and also two toggle switches (12v dc) to control a future fan and to shut off the element when I'm using charcoal instead of the element

do I need an inline fuse or other stuff? oh and ill have a box to put all this stuff in

The element you mentioned is 240V, 3500W. The amperage is about 15A, so 25A SSR is enough.
You don't need a fuse for the controller itself. But you need a circuit breaker to protect your heater. You can use 2 pole 20A breaker switch: http://www.auberins.com/index.php?main_ ... cts_id=580
